- 1.8 oz grated parmesan

- 1 lemon (juice)
- 0.7 oz flour
- 1.1 oz butter
- 1 pinch nutmeg

Steps
First, I put about 2 quarts of water in a pot and bring it to a boil.
I add the lemon juice and flour, stirring vigorously to prevent lumps.
I wash and clean the leeks, removing the green parts and roots, then put them in the pot to blanch for 3/4 minutes and then drain them.
I melt the butter in a baking dish that can also go in the oven and arrange the leeks in a single layer,
I salt, pepper, and add a pinch of grated nutmeg.
I sprinkle the leeks with grated cheese and let everything flavor for 5 minutes on low heat.
I also add the breadcrumbs and put it in a preheated oven at 392°F for about 15 minutes.
