- 3.5 oz caciocavallo cheese (+ extra grated)

- to taste salt and pepper

FOR THE PREPARATION OF THE BAKED PASTA SICILIAN STYLE RECIPE
Wash, trim the eggplant and cut it into not too small cubes. Place them in a colander, sprinkle with coarse salt and let sit for at least 30 minutes to lose bitterness.
Peel the hard-boiled eggs (they need to boil from cold for 7/8 minutes) and slice them. In a pan, sauté the garlic clove in a little olive oil.
Then remove it and pour the tomato passata, seasoning with salt and pepper.
Add some basil leaves and continue cooking for about 15/20 minutes.
After the time, rinse the eggplants, dry them, and fry in abundant seed oil.
Drain them and dry on kitchen paper and set them aside.
As usual, cook the pasta in boiling salted water and drain it al dente.
Place it in a bowl with the tomato sauce, mixing everything well.
Add also the diced cooked ham, the cheese also diced, and the fried eggplants.
Also add the sliced hard-boiled eggs, mixing pasta and ingredients well.
Oil a baking dish and sprinkle it with breadcrumbs.
Pour in the Sicilian baked pasta in the dish and sprinkle grated caciocavallo mixed with breadcrumbs on top.
Bake in a preheated oven at 356 °F for about 20/25 minutes.
Remove from the oven, let it rest for a few minutes, then serve this sumptuous and rich baked pasta at the table!
Enjoy your meal! Annalisa
