BAKED PASTA Sicilian Style

BAKED PASTA SICILIAN STYLE

Baked Pasta Sicilian Style

Ingredients for BAKED PASTA SICILIAN STYLE RECIPE

  • 11 oz macaroni (I use small penne)
  • 2 hard-boiled eggs
  • 1 round eggplant
  • 3.5 oz Cooked ham (diced)
  • 3.5 oz caciocavallo cheese (+ extra grated)
  • 1 clove garlic
  • 14 oz Tomato passata (I recommend Petti or Mutti)
  • to taste basil
  • to taste breadcrumbs
  • to taste salt and pepper

FOR THE PREPARATION OF THE BAKED PASTA SICILIAN STYLE RECIPE

  • Wash, trim the eggplant and cut it into not too small cubes. Place them in a colander, sprinkle with coarse salt and let sit for at least 30 minutes to lose bitterness.

  • Peel the hard-boiled eggs (they need to boil from cold for 7/8 minutes) and slice them. In a pan, sauté the garlic clove in a little olive oil.

    Then remove it and pour the tomato passata, seasoning with salt and pepper.

  • Add some basil leaves and continue cooking for about 15/20 minutes.

    After the time, rinse the eggplants, dry them, and fry in abundant seed oil.

  • Drain them and dry on kitchen paper and set them aside.

    As usual, cook the pasta in boiling salted water and drain it al dente.

  • Place it in a bowl with the tomato sauce, mixing everything well.

    Add also the diced cooked ham, the cheese also diced, and the fried eggplants.

  • Also add the sliced hard-boiled eggs, mixing pasta and ingredients well.

    Oil a baking dish and sprinkle it with breadcrumbs.

  • Pour in the Sicilian baked pasta in the dish and sprinkle grated caciocavallo mixed with breadcrumbs on top.

    Bake in a preheated oven at 356 °F for about 20/25 minutes.

    Remove from the oven, let it rest for a few minutes, then serve this sumptuous and rich baked pasta at the table!
