Baked Potato Casserole

This delicious baked potato casserole is a real treat for the palate and the eyes!!!!!!!

When we eat it, we experience two different textures: the crunchier part that stayed outside of the pan and the softer, more delicate part flavored by the mix of chopped shallots and thyme leaves. I must say it is a very, very good side dish that pairs well with meat and fish dishes.

My advice is to slice all the potatoes you need to fill your baking dish with a mandoline and then try to arrange and wave the slices AFTER.

Honestly, I had started placing one sliced potato at a time but then they fall, the movement changes and it’s better to have all the quantity sliced and then …CREATE!

I’m providing general instructions for this baked potato casserole because some liquid is created during cooking, and you need to adjust the recipe as the cooking progresses (in the sense that at a certain point I removed some of the broth that had formed since the potatoes were already cooked).

I seasoned it with thyme and chopped shallots, but we can vary … maybe add paprika or chili if we like spicy dishes, add a mince of rosemary and garlic for a side dish with a stronger flavor and as always I leave to you that addition or elimination that will make the dish suitable for your personal tastes!

Ingredients

  • 4 potatoes (nice and chunky)
  • 1 1/4 cups vegetable broth (already prepared)
  • 1 shallot (or small onion)
  • 1 teaspoon thyme (for me dried)
  • 1 teaspoon butter (melted)
  • to taste salt
  • to taste pepper

Recipe Preparation for Baked Potato Casserole

  • For the baked potato casserole recipe, start by washing and peeling the potatoes.

    Since I’m not able to cut them very thin with a knife, I use a mandoline and put all the slices in a bowl.

    I quickly pass them under running water and pat them dry with a clean cloth or kitchen paper towels.

  • In a pan, place the already prepared vegetable broth, plenty of dry thyme leaves, and finely chopped shallot.

    Let it simmer for 3 to 4 minutes, seasoning with salt and pepper.

  • Pour this seasoned hot broth over the waves of raw potatoes and then bake at 350°F for about 40 minutes.

    As I mentioned earlier, after about half an hour I removed the pan from the oven and checked the cooking with a skewer. Since I thought too much liquid had formed, I removed a few tablespoons, then put the potato casserole back in the oven for the last few minutes.

  • If you want a more noticeable crust, change the oven mode to GRILL and let it brown for the last few minutes.

  • Remove from the oven, let it cool for 10 minutes, and serve at the table.

    THE BAKED POTATO CASSEROLE is a side dish that pairs well with fish and also with meat, and it goes great with a roast chicken!
