This delicious baked potato tart is a true delight for the palate and the eyes!!!!!!!
When we eat it we notice two different textures: the crispier one because it stayed out of the pan and the softer, more delicate one flavored with a mix of finely chopped shallot and tiny thyme leaves. I must say it is a very, very good side dish that pairs well with meat and fish dishes.
My advice is to slice all the potatoes you need to fill your pan with a mandoline slicer and then try to shape and ripple the slices AFTER.
Honestly I started placing one sliced potato at a time but then they fell and the movement changed, so it is better to have all the slices ready and then …CREATE!
I give you general guidance for this baked potato tart because some liquid forms while baking and you need to adjust the recipe as the cooking time extends (meaning that at a certain point I removed some of the little broth that had formed since the potatoes were already cooked).
I flavored it with thyme and chopped shallot but we can vary … maybe add paprika or chili if you like spicier preparations, use a mix of rosemary and garlic for a stronger-flavored side dish and as always I leave to you any addition or removal that will make the dish suitable for your personal tastes!

- 1 1/4 cups vegetable broth (ready-made)
- 1 shallot (or small onion)
- 1 teaspoon thyme (dried, in my case)
- 1 teaspoon butter (melted)

Preparation Recipe Baked Potato Tart
For the baked potato tart recipe I start by washing and peeling the potatoes.
Not being able to cut them paper-thin with a knife I use a mandoline and place all the slices in a bowl.
I quickly rinse them under running water and pat them dry with a clean towel or kitchen paper.
In a pan I put the ready-made vegetable broth with plenty of dried thyme leaves and the finely chopped shallot.
I let it simmer for 3-4 minutes, adjusting salt and pepper.
I pour this seasoned hot broth over the waves of raw potato slices and then bake at 356°F for about 40 minutes.
As I said before, after about half an hour I took the pan out of the oven and tested the doneness with a skewer; since there was, in my opinion, too much liquid, I removed a few tablespoons, then put the baked potato tart back in the oven for the final minutes.
If you want a more pronounced crust change the oven setting to BROIL and brown for the very last minutes.
I remove it from the oven, let it cool for 10 minutes and serve.
THE BAKED POTATO TART is a side dish that pairs well with fish and meat and goes wonderfully with roast chicken!
