I discovered pumpkin as an adult, and now in the right season, I prepare it occasionally because it’s low-calorie, it pairs well with cheese and nuts, it’s excellent in stuffed pasta, and its light taste has won me over!
Today, after picking up two nice pieces at Esselunga, I decided to make a side dish that then became a single dish because I paired it with a piece of Gorgonzola, so even though it’s not a real recipe, I decided to post this simple and rustic baked pumpkin with garlic and rosemary on the blog!
I salted it using Maldon salt because these crisp and flaky crystals make the baked pumpkin taste much more delicious….
WHAT SPICES TO USE TO FLAVOR THE PUMPKIN?
The pumpkin has a light and delicate flavor and goes perfectly with
– sage;
– rosemary;
– garlic;
– cumin;
– oregano;
– nutmeg.

BAKED PUMPKIN

Ingredients BAKED PUMPKIN RECIPE
- 28 oz pumpkin
- 2 cloves garlic (2/3 cloves to taste)
- to taste fresh rosemary
- to taste Extra virgin olive oil
- to taste Maldon salt

Preparation BAKED PUMPKIN RECIPE
I preferred to use the pumpkin with the skin so I washed and dried it well.
I removed the seeds and internal fibers.
Now with a sharp blade, I cut slices of about 0.4 inches which I laid on the baking tray protected with parchment paper.
Now I add the garlic cloves, an abundant chop of fresh rosemary, a drizzle of extra virgin olive oil, and I baked it in a preheated oven at 375°F.
It will take about 40 minutes for the baked pumpkin slices to be tender and not mushy.
Turn off the heat, salt with the Maldon, add a drizzle of extra virgin olive oil if you want, and serve this very simple and rustic side of baked pumpkin! Enjoy your meal ^_^!

Tips and Notes
I preferred not to pepper the baked pumpkin because I wanted a neutral dish, but as always, feel free to add plenty of pepper if you like… Apart from rosemary, which for me is the perfect aromatic herb for the baked pumpkin, thyme is also not bad at all…
