FOR THE PREPARATION OF THE BAKED SALMON STEAK WITH ASPARAGUS RECIPE
I start by cleaning the asparagus, removing the slightly woody lower part of the stalk with a vegetable peeler.
Now I arrange them side by side in the baking dish, which must also accommodate the salmon fillets.
Then I pour the dry white wine and some extra virgin olive oil into the dish and season everything with salt and pepper.
Then bake in a preheated oven at 190/200°C (374/392°F) for 7-8 minutes.
To complete this light fish main course, I now place the salmon fillets on the asparagus, which by now will be more tender and flavorful.
Add the garlic clove and the lemon cut into slices.
All that’s left is to season this quick and healthy salmon with salt and pepper and continue cooking for another 20 minutes, of course taking into account the thickness of the fish steaks.
Now that the baked salmon and asparagus is finished I can serve it, and if you like, after straining the pan juices I add a little cornstarch (dissolved in a bit of water), mix it into the baking dish and spoon the sauce over the fresh salmon fillets!
