Today I cooked a second fish course with baked salmon slices with rosemary and lemon, a dish that’s ready in 30 minutes including preparation and cooking!
Salmon is a fish rich in Omega 3, the famous fatty acids that, when adequately included in the diet, reduce the risk of heart attack, cardiovascular diseases, and even coronary diseases. They also lower the risk of stroke, thin the blood, and have an antiarrhythmic effect on the heart (Source here)
It’s a fish I really like because it’s versatile, cooks quickly on the stove or in the oven, pairs well with many other foods, and… it’s good for our body.
The cooking of salmon makes a protein called albumin coagulate, which creates that whitish layer that isn’t very pretty to look at but doesn’t alter the good taste of the dish. If we want to avoid it, we should immerse the salmon in water and salt (with 50-100 g of salt per liter of water) for about 20 minutes!

- 2 slices salmon
- 2 sprigs rosemary
- 1/2 lemon (sliced)
- 1/2 lemon (juice)
- to taste salt
- to taste pepper

Steps
1) The recipe for this easy and tasty fish main course starts by preheating the oven to 392°F.
2) In the baking dish that will go in the oven, I place a few slices of lemon, then place the fish slices on top and garnish with fresh rosemary.
3) I drizzle some extra virgin olive oil and add a few Maldon salt crystals.
4) All that’s left is to put it in the oven and bake the fresh salmon fillets for about 20 minutes or depending on your appliance’s characteristics.
5) Once the baking dish is out of the oven, I add a little lemon juice and immediately serve this simple and quick fish dish!
