BAKED STUFFED CELERY

I spent a few days at my little sister Annamaria’s place and had fun being an aunt with my amazing nieces and nephews Mia, Diego, and Alessandro. Besides playing with them and studying nursery rhymes (Hello Mia, good luck at school today, hehe), I browsed through the many cookbooks AM has, and among them, a photo of baked stuffed celery caught my attention. So today, I wanted to try the idea in the kitchen.

To be honest, when I went to look for the exact recipe, I couldn’t remember the volume I had read anymore, so I did it my way, and the result is definitely very tasty!!!

Between us dear readers, it’s the incredibly simple recipe of a meatloaf placed inside celery, but the idea is so cute that … it seems like a nice thing to put on my beloved blog!!!

Celery is a low-calorie vegetable (100 g of celery contains 20 kcal / 84 kj) and it is recommended to consume it fresh and raw. It mainly contains potassium, magnesium, and calcium, vitamin C, vitamin K; it also includes lutein, a powerful antioxidant protective for the brain. Celery consists of about 90% water; for this reason, it is an excellent diuretic and purifying food. BAKED STUFFED CELERY

Ingredients BAKED STUFFED CELERY RECIPE

  • 1 celery (mine weighed about 1.7 kg whole)
  • 12 oz mixed ground meat
  • 5.3 oz salami paste
  • 2 medium eggs
  • 2 tablespoons heaping of breadcrumbs
  • 2 tablespoons heaping of grated Grana cheese
  • 15 cherry tomatoes (datterini to taste)
  • 1 shallot (finely chopped)
  • to taste salt and pepper
  • to taste string or food elastic
  • to taste Extra virgin olive oil

Preparation BAKED STUFFED CELERY RECIPE

  • Wash and dry the whole celery.

    Now cut a piece off the top while keeping the heart, which will be filled with the mixed ground meat.

  • Blanch for 7/8 minutes the celery, turning it in the casserole while it is boiling, trying not to detach the various stalks, and let it cool completely on a plate.

  • For the filling put the mixed ground meat, the salami paste into a bowl, and mix the ingredients well with your hands.

  • Add then the eggs, the grated Grana cheese, and the breadcrumbs, mixing everything well.

    I also added some chopped celery leaves and adjusted the preparation with salt and pepper.

    Carefully proceed now to fill the celery by inserting the meat mixture between the tender, blanched stalks.

  • Tie the stuffed celery with kitchen string (I had some roast elastics and used those, as you can see from the photo of the celery before cooking) and set it aside.

  • Chop a shallot and also cut the cherry tomatoes you prefer into halves or quarters and place these ingredients on the bottom of a baking dish with a little olive oil.

  • Adjust salt and pepper and bake at 375°F/400°F for about 45/50 minutes, occasionally turning the baked stuffed celery to ensure even cooking.

  • If the tomato and shallot seasoning dries out too much, add a little boiling water so the sauce will be more fluid and tasty.

  • Once cooked, just bring to the table the baked stuffed celery, sliced, already composing the plates for your guests. A very simple but visually appealing and tasty dish… Enjoy your meal with the baked stuffed celery!
