After watching Benedetta Rossi prepare a tray of faux lasagna by placing raw tagliatelle nests directly in the baking pan, I tried making it in my kitchen and here’s this rich and delicious recipe for baked tagliatelle nests with sausage that cooked perfectly over low heat and are delicious!
I also added béchamel sauce along with a sumptuous and genuine sausage ragù that I often buy and always have available in my fridge!

Ingredients for BAKED TAGLIATELLE NESTS WITH SAUSAGE
- 21 oz sausage or sausage pesto (of excellent quality)
- 3 1/3 cups datterino tomato sauce (for me Agromonte)
- 1 glass red wine
- as needed classic soffritto (celery, onion, carrot)
- as needed extra virgin olive oil
- as needed salt and pepper
- 2 cups milk (for me Alta Qualità Granarolo)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- as needed salt, pepper, and nutmeg
- 6 nests of dry tagliatelle (250 grams in total of egg pasta)
- as needed grana padano (grated)

FOR THE PREPARATION OF BAKED TAGLIATELLE NESTS WITH SAUSAGE
First, wash celery and carrots and peel the onion.
Finely slice everything and put it in a large saucepan with a drizzle of extra virgin olive oil.
Add the crumbled sausage or pesto and let it brown over medium heat.
Then pour in the wine and let the alcohol evaporate over medium-high heat.
Then add the tomato sauce (for me datterino Agromonte), season with salt and pepper, and let it simmer over low heat for at least 40/45 minutes.
At this point, take our baking dish and make the first layer of sauce.
Add some spoonfuls of béchamel sauce here and there
Place the tagliatelle nests neatly in a single layer on the sauce.
Sprinkle the dry egg tagliatelle with the remaining sausage ragù and béchamel, also adding a generous handful of grated grana.
Then bake the baked tagliatelle nests with sausage in a preheated oven at 350°F for about 45 minutes or according to the specifics of your appliances.
A rich and tasty dish with an enveloping sauce that will surely please the whole family!!
