BAKING DISH of quinoa and shrimp

A picture seen on a foreign cooking site inspired me to recreate it in my kitchen and propose this baking dish of quinoa and shrimp on the blog!

I love shellfish and wanted to try a recipe that didn’t include pasta as an ingredient, so this pseudo cereal is perfect!

The quinoa is a very healthy food, containing all the 10 essential amino acids. It is also rich in minerals, magnesium, phosphorus, and potassium, essential for our body’s health. Quinoa is a highly satisfying food yet light and digestible because it is practically fat-free and definitely gluten-free!

BAKING DISH OF QUINOA AND SHRIMP

Baking dish of quinoa and shrimp

Ingredients FOR BAKING DISH OF QUINOA AND SHRIMP

  • 1 cup quinoa
  • 18 shrimp
  • 2 lemons
  • 1 lime
  • fresh parsley (chopped)
  • 1 clove garlic (chopped)
  • 1 shallot (chopped)
  • 1 chili pepper
  • to taste extra virgin olive oil
  • to taste vegetable broth (or water)
  • to taste salt and pepper

FOR THE PREPARATION OF THE RECIPE BAKING DISH OF QUINOA AND SHRIMP

  • In a pan, put a little extra virgin olive oil

    with the chopped garlic clove and shallot.
    Add the shrimp, already cleaned but keeping the carapace only on the
    tail end of the shellfish.

  • Season with salt and pepper, add the grated lime zest, and as the shrimp change color, turn off the heat and set aside.

  • In the chosen baking dish, pour the quinoa, leveling the layer well.

    Now patiently insert fairly regular rows of shrimp and lemon
    slices.

  • Then pour the vegetable broth or water and bake at 375°F for about 15/20 minutes or depending on your appliance’s characteristics.

  • After cooking and before serving at the table, season with an emulsion of lemon juice and oil and some fresh chopped parsley.

    If you like, add some fresh or dried chili pepper and serve at the table.

  • It’s a tasty dish that’s great even cold as an alternative pasta salad! Enjoy your meal with the baking dish of quinoa and shrimp!
