BELL PEPPER AND POTATO CREAM

Ingredients

  • 2 potatoes
  • 1 bell pepper (red)
  • 1 Tropea onion
  • to taste extra virgin olive oil
  • to taste salt
  • to taste sweet paprika

Preparation

  • For the bell pepper and potato cream boil the potatoes starting with cold water and drain them when they are tender and not overcooked.

  • Using a potato masher, mash them while still hot, collecting the puree in a bowl.

  • Finely chop the onion and sauté it in a pan with a little extra virgin olive oil.

  • Wash the bell pepper, removing the seeds and internal filaments.

    Dice it and add it to the onion, letting it cook for 7/8 minutes: it should be tender.

  • Put the cooked onion and bell pepper into a mixer and blend everything.

    Combine this sauce with the mashed potatoes to get a creamy sauce.

  • Adjust the salt and also add the paprika, mixing well this kind of savory mousse.

  • Serve this sauce with flatbread wedges, croutons, and savory biscuits for a delightful appetizer…
