Berry Semifreddo with Fresh Cream and Yogurt: Light and Refreshing

The berry semifreddo recipe is very simple and hides a surprise inside with white chocolate chips that add a bit of crunchiness to the dessert’s great creaminess.

I’ve added white chocolate pearls, but if you prefer, other types of chocolate such as milk or dark are also good options.

I made rather substantial single servings, but the quantities listed below can also suffice for 8 people with a lighter appetite, clearly!

The cream for mixing the berries is a delicious mix of thick Greek yogurt and cream, and it’s very enjoyable even if you want to add other fruits like pureed peaches or apricots.

A very small decoration with a dollop of cream, blackberries, and blueberries, but if you prefer not to increase the calories, a few fresh mint leaves will suffice!

Ingredients for BERRY SEMIFREDDO

  • 5.3 oz berries (blackberries, blueberries, strawberries …also frozen)
  • 1/3 cup 2% fat Greek yogurt (also 0% fat as per your preference)
  • 1 1/2 cups fresh whipping cream
  • 2 tablespoons powdered sugar
  • 2 tablespoons white chocolate chips (or other as you like)
  • 6 dollops whipped cream
  • some pieces of berries (as you like)

HOW TO PREPARE BERRY SEMIFREDDO

  • I blend the berries, and if I don’t like the seeds, I strain the mixture through a sieve. Personally, I don’t do this, but we’re in a democracy so…

    I continue the recipe for this cold berry dessert and whip the fresh cream in a very clean and chilled container, perhaps in the refrigerator to speed up the process.

  • I also add the yogurt and sifted powdered sugar, mixing everything well.

    I mix the cream and yogurt with the blended berries and stir well to uniform the consistency of the cream.

  • I also add the white chocolate chips or other, and then I assemble the single servings of berry semifreddo.

    I place the cups in the freezer until 15 minutes before tasting the quick and fresh spoon dessert!

  • Take out the dessert 15 minutes before serving it at the table and decorate it with a dollop of whipped cream and a few blueberries or blackberries.
