Bilbolbul Cake without Eggs and Butter

The Bilbolbul cake without eggs and butter that I found again in Ada Boni’s Il Talismano della Felicità reminded me of my adolescence when I was a young girl attending the Scientific High School “F. Severi” in Faenza because it was a cake my friend Cristina often made when after a movie, we would go to her house for some tea!!

It’s a very chocolaty cake that is soft and fluffy and perfect when accompanied by whipped cream or orange jam or other fruits.

I didn’t use cream of tartar and baking soda as in the original recipe but a packet of baking powder as always.

The name of the cake bilbolbul is taken from a comic character in the Italian magazine Corriere dei Piccoli created by Attilio Mussino in 1908.

Bilbolbul is an African child who experiences all sorts of adventures and his name is also given to the International Comic Festival held in Bologna since 2007.

Bilbolbul Cake

Ingredients for BILBOLBUL CAKE without eggs and butter

  • 7 oz Flour
  • 3.5 oz Unsweetened cocoa powder
  • 8.8 oz Sugar
  • 1 packet baking powder for cakes
  • 1 1/4 cups Milk
  • to taste orange (grated zest)
  • 1/2 tsp Ground cinnamon (optional)

  • Stand Mixer

Preparation

  • Place in a bowl the sifted flour with the baking powder, sugar, unsweetened cocoa (or sweet if you prefer), grated orange peel, ground cinnamon.

  • Dilute all the powders with the milk, stirring until you have a homogeneous and rather smooth mixture.

  • Line the bottom of the chosen mold with dampened and squeezed baking paper or use a knob of butter to grease and sprinkle the mold with breadcrumbs.

  • Bake in a preheated oven at 350 °F for about 30/40 minutes or according to the characteristics of your appliance.

  • The cake should not be too dry and maintain its softness.

  • Always do the toothpick test for safety and when cooked, let it cool and… enjoy it!!! Good afternoon and enjoy your meal with the delicious BILBOLBUL cake!
