Black Forest Crêpes with Cherries

In a cooking magazine, I saw a photo and decided to try making these delicious Black Forest crêpes with cherries, which are easy and truly indulgent. My son and I enjoyed them as an afternoon snack the other day.
The Black Forest is not only a region in the southwestern mountainous area of Germany, bordering France but also a very delicious chocolate cake filled with cream and cherries.

Ingredients RECIPE BLACK FOREST CRÊPES WITH CHERRIES

  • 8.8 fl oz milk (Whole High Quality Granarolo for me)
  • 3/4 cup all-purpose flour
  • 2 1/2 tbsp sweet cocoa powder
  • 1 butter (a knob of butter to grease the pan)
  • 1 tbsp powdered sugar
  • 2 medium eggs
  • 5.3 oz mascarpone
  • 5.3 oz fresh whipping cream
  • 1 tbsp powdered sugar
  • as needed cherries in syrup

FOR THE PREPARATION OF THE RECIPE BLACK FOREST CRÊPES WITH CHERRIES

  • In a bowl, mix the sifted flour with the sugar and sweet cocoa powder.

  • Also add the lightly beaten eggs and the milk.

    Mix everything with an electric whisk and let it rest for about 30 minutes.

  • In the pan that we will use to make the crêpes, melt the butter and add a ladle of batter left to rest for 30 minutes.

    The first crêpe or pancake never turns out perfect (or rather it NEVER does for me), so discard the batter and proceed to make the crêpes using all the batter.

    If it thickens too much, add a splash of milk, remember…

  • As you make the crêpes, stack them on top of each other, let them cool, and prepare the filling.

  • Mix the mascarpone by softening it a little and then add the fresh whipped liquid cream.

    Also add the sugar and then proceed to fill the crêpes with a generous tablespoon of filling, also adding some cherries in syrup.

    Close the crêpes, sprinkle with powdered sugar, and serve immediately at the table.
