FOR THE PREPARATION OF THE RECIPE BRAIDED STRUDEL WITH COOKED RADICCHIO AND GORGONZOLA
I clean the red radicchio well and cut it into coarse strips.
In a pan, I add a drizzle of extra virgin olive oil and add the radicchio, letting it wilt for 5/6 minutes and seasoning it with salt and pepper.
I let the vegetables cool, then chop the walnut halves and cut the gorgonzola into small pieces and the scamorza into strips.
I unroll the puff pastry package, divide it virtually into 3 parts lengthwise.
In the center, I place the stewed red radicchio, the walnut halves, and the cheeses, arranging everything evenly.
I cut the two sides of the pastry (here you can find step-by-step photos) and then braid them over the filling as you can see in the attached photo… Many words but things are easy, very easy!
Now I brush the surface of the strudel with radicchio, cheese, and walnuts with the lightly beaten egg yolk and then sprinkle everything with sesame seeds so they can adhere perfectly during baking.
Bake the savory pie with Danish-style braid at 375°F for about 35/40 minutes or depending on the characteristics of our home oven.
I let it cool slightly and serve at the table!
