I’ve used two types of cheese gorgonzola and scamorza, but if you prefer, you can use just one type, doubling the indicated amount to 160 grams of the chosen type of cheese.

PREPARATION FOR BRAIDED STRUDEL WITH COOKED RADICCHIO AND GORGONZOLA
I clean the red radicchio well and cut it into coarse strips.
In a pan, I put a little extra virgin olive oil and add the radicchio, letting it wilt for 5-6 minutes, seasoning with salt and pepper.
I let the vegetables cool, chop the walnut halves and cut the gorgonzola into pieces and the scamorza into strips.
I unroll the package of puff pastry divide it virtually into 3 parts, and place the stewed red radicchio in the center, the chopped walnut halves, and the cheeses, arranging everything fairly evenly.
I cut the two sides of the dough (here you will find the step-by-step photos) and then braid over the filling as seen in the attached photo… It may seem like many words, but it’s really easy!
Now I brush the surface of the strudel with radicchio, cheese, and walnuts with the lightly beaten egg yolk and then sprinkle it all with sesame seeds so they adhere perfectly.
Now all that’s left is to bake the savory pie with Danish-style braid at 375°F for about 35-40 minutes or depending on the characteristics of our home oven.
