Bread with Yellow and Red Cherry Tomatoes

These slices of bread with yellow and red cherry tomatoes are easy and tasty crostini for a homemade and genuine appetizer, simple, quick, and very flavorful!

We can prepare the crostini with unsalted Tuscan bread or rustic bread, the result is guaranteed.

Stuffed crostini are a quick idea for an appetizer that we can also make at the last minute by adding a tuna mousse (drained tuna blended with creamy cheese and flavored with capers and an anchovy), a mortadella mousse (equal weight of ricotta and mortadella blended), mixed sautéed vegetables flavored with garlic and basil, and much more to suit personal taste.

Personally, I prefer to toast the bread on the grill or griddle because they are toasted snacks that are much tastier since the bread doesn’t get too soggy, and the balance of flavor is more intense and excellent!

  • 4 slices sandwich bread (toast)
  • 8 cherry tomatoes (yellow, green, and red)
  • 2 anchovies in oil
  • 1 clove garlic
  • 1 pinch dried oregano
  • to taste basil
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper

FOR THE PREPARATION OF BREAD WITH YELLOW AND RED CHERRY TOMATOES RECIPE

  • to make them even more flavorful and tasty BUT IF YOU ARE IN A HURRY…😁

    I wash and cut into wedges the mixed yellow, red, and green cherry tomatoes placing them directly into a bowl.

  • I also add the peeled and halved garlic clove,

    I season with a pinch of oregano, plenty of basil leaves, good quality EVO oil, and adjust salt and pepper.

    Mix well, cover with plastic wrap, and leave in the refrigerator to infuse until just before setting the meal.

  • At the right time, I grill the slices of bread (under the oven grill or on the griddle) which I will then cut diagonally.

  • I cover the toasted bread with the mixed cherry tomatoes, removing the garlic, and adding half an anchovy fillet in oil on each bread triangle.

    Here is the quick crostino with colorful cherry tomatoes ready to be served at the table!
