Today I prepared a dish of breaded and fried chops with lamb meat, which we find at the butcher’s shop this time of the year.
I fry very little in the kitchen, and I can cook lamb meat just to please some of my guests. Today I prepared 2 lamb main courses for old friends who moved to another country, returned to Bologna to visit relatives, and with whom I have a strong and affectionate friendship; I couldn’t refuse: they were also old customers of my trattoria, “Il terzo cerchio”.

Before breading the chops, and even before making scallops, I usually pound the meat and use THIS MEAT TENDERIZER
in steel as professionals use in the kitchen, easy to clean and handy, weighing about 1.76 lbs! And it’s everlasting!!!!!!!!
BREADED AND FRIED CHOPS

Ingredients
- 2.2 lbs lamb chops
- 3 eggs
- 1 3/4 cups breadcrumbs (I prepare it with toast bread)
- as needed peanut oil
- as needed salt
Tools
- Frying pans
- Deep plates
- Meat tenderizer
Steps
The preparation is quick and the cooking is the same, so let’s proceed immediately to the recipe for the well-breaded and fried lamb chops in peanut oil:
1) Beat the eggs in a deep plate
2) Put the breadcrumbs in a second plate
3) Pound the chops and dip them in the beaten eggs
4) Then coat them with breadcrumbs, pressing them a little so that the breadcrumbs adhere better to the meat
5) Pour plenty of seed oil (peanut oil is the most suitable due to its high smoke point, making it ideal for frying)
6) When it’s hot, start frying the lamb chops a few at a time to avoid lowering the temperature, cooking them for about a couple of minutes per side
7) Drain the freshly fried lamb chops on special absorbent paper and salt them before serving with a nice fresh and crunchy salad!
