I confess… I baked these breakfast cookies without ammonia and with regular baking powder for a couple of minutes too long, but they are so good that I published them on the blog anyway, inviting you to shorten the baking time though…

Ingredients for BREAKFAST COOKIES

  • 1 egg
  • 2 egg whites
  • 2.8 oz Sugar
  • 1 cup Flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon organic lemon zest
  • to taste Sugar crystals
  • to taste Powdered sugar

  • Baking Tray
  • Parchment Paper

Preparation for BREAKFAST COOKIES

  • Beat the whole egg with 50 grams of sugar vigorously using an electric mixer until you have a light and fluffy mixture, also adding the lemon zest. Whip the egg whites until soft and then add 40 grams of sugar to make a sort of meringue.

  • To the fluffy whole egg and sugar mixture, alternately add the sifted flour with the baking powder and the whipped egg whites with sugar.

  • You will have a fluid and very soft mixture that you will put in a piping bag. Line a baking tray with parchment paper and use the piping bag to trace several breakfast cookies spaced at least an inch apart.

  • Make two layers of batter on top of each other and sprinkle each dipping cookie with sugar crystals and powdered sugar.

  • Bake these delicious breakfast cookies in a preheated oven at 375/390°F for 10/13 (better 10) minutes: the edges will color, but the inside of the cookie will remain soft!

  • Let them cool completely before removing them from the tray and …don’t eat them all at once… The breakfast cookies are delicious….
