Buckwheat Blinis

Today I prepared buckwheat blinis to serve with sour cream and smoked salmon.

Sour cream, typical of the more northern countries, has long been appreciated in Italy because it pairs well with many savory and sweet dishes.
The Meggle company offers other high-quality products to prepare excellent dishes in our kitchens such as Bavarian butter and lactose-free butter, essential in cases of intolerance.
Sour cream is also an excellent product for preparing sweet creams for fillings and its particular taste makes the final product very appreciated and with a delightful texture.

Buckwheat Blinis

Ingredients RECIPE BUCKWHEAT BLINIS

  • 3/8 cup buckwheat flour
  • 1/3 cup all-purpose flour
  • 1.5 tsp baking powder (for savory preparations)
  • 1/2 cup plain yogurt
  • 1 egg
  • 2 1/3 tbsp water
  • to taste salt
  • 3.2 oz smoked salmon
  • 1 jar sour cream (Meggle)
  • to taste chives

Preparation

  • Mix the buckwheat flour with the all-purpose flour and the baking powder and pour everything into a bowl.

  • Now add the yogurt, the egg and the water, stirring with a hand whisk until you obtain a smooth, fluid batter.

    Cover with plastic wrap and let the batter for the buckwheat blinis rest for 30 minutes.

  • Heat a nonstick pan over high heat and when it’s hot pour small amounts of batter with a small ladle trying to form small circles.

  • After a short time you will see small bubbles form on the surface and you can flip the blinis to the other side, also for a few seconds.

  • Continue until the batter is finished, keeping the buckwheat blinis already made warm.

  • Mix the sour cream with a few chive stems cut into small pieces.

    Serve the buckwheat blinis with a generous dollop of sour cream and a slice of smoked salmon.

Tips and notes

The sour cream is also used specially in sweet preparations as I mentioned earlier and in fact on the blog you can also find an special American apple cake that includes this ingredient in the batter; if you try it you’ll notice a special and for me delicious flavor!! Sour cream is used in cuisines around the world and is called crème fraîche in France and sour cream in English-speaking countries.
