Ingredients BUFFALO CREAM RECIPE with cherries, chives, and black olives

  • 3 buffalo mozzarella
  • 200 g buffalo ricotta
  • 150 g cherries
  • 70 g black olives
  • 1 bunch chives
  • to taste extra virgin olive oil
  • to taste salt
  • to taste balsamic vinegar glaze
  • to taste pepper

FOR THE PREPARATION OF THE BUFFALO CREAM RECIPE with cherries, chives, and black olives

  • I blend the buffalo mozzarella together with the ricotta while keeping the preservation liquid of the dairy products.

    This will result in a very soft cream which I adjust with salt and pepper and season with a few tablespoons of extra virgin olive oil.

  • I wash all the cherries, keeping some whole while pitting and dicing the others to season this very creamy sauce.

    I pour the cream into 4 shallow bowls, dividing it equally, then season each dish with the diced cherries and the pitted black olives, also finely chopped.

  • I add a few drops of balsamic vinegar (I preferred the glaze) and a garnish of fresh washed and dried chives.

    I also add a few whole cherries and serve.
