Cake 4 Delights today, a cake filled before baking and with different textures, very VERY GOOD!
Specifically, we have a cookie base similar to a cheesecake with plain cookies like Oswego and butter, a layer of cherry jam (for me Sour Cherries from Modena I.G.P. from the company MonteRè), one of classic custard cream flavored with vanilla and finally the “real” batter of the Cake 4 Delights!
PREMISE …the Cake 4 Delights is not complicated at all but clearly requires the normal time expected for 4 different preparations but I assure you the taste and aroma will console you abundantly!
The Cake 4 Delights as I said before should be sliced only when it is well cooled because the different textures make it delicate.

Ingredients RECIPE CAKE 4 DELIGHTS
- 1 1/2 cups Plain cookies (for the base)
- 7 tbsps Butter (for the base)
- 2 medium eggs (for the cream)
- 10 tbsps Sugar (for the cream)
- 2 tbsps Flour (for the cream)
- 2 cups Milk (for the cream)
- 1 tsp Vanilla extract (for the cream)
- 1/2 cups Cherry jam
- 1 Lemon zest (for the batter)
- 1/3 cup Sugar (for the batter)
- 1 cup Flour (for the batter)
- 5 1/2 tbsps Butter (for the batter)
- 2 medium eggs (for the batter)
- 2 tsps Baking powder (for the batter)
- as needed Milk (as needed)
- as needed Powdered sugar (for final decoration)

FOR THE PREPARATION OF THE RECIPE CAKE 4 DELIGHTS
For the custard cream mix the whole eggs with the sugar, then add the sifted flour.
Pour the milk slowly while mixing with a hand whisk.
Put the liquid in a saucepan, add a teaspoon of VANILLA EXTRACT and slowly bring it to a boil.
Keep stirring and continue cooking until the custard cream is adequately thickened.
Cover with cling film in contact with the custard cream and let it cool completely.
Chop the plain cookies and combine them with melted butter to make the base of the cake 4 delights.
Line the 8-inch springform pan with parchment paper, pour the cookie mix in, and press it down well with a spoon, creating the bottom of the cake 4 delights.
Place the cherry jam on top, leveling it well and covering the whole bottom of the cake.
Now place the cold custard cream on the cherry jam and start mixing the last soft part of the cake.
In a bowl, put the butter already softened and soften it further with electric whisks.
Then add one yolk at a time, reserving the egg whites which will be whipped later.
Mix the batter well and then add the sifted flour with the baking powder and add milk if needed for a smooth mixture.
Now gently fold in the whipped egg whites using a flexible spatula. Mix well and pour this batter over the custard, spreading it well with a spatula.
Bake the cake 4 delights in a preheated oven at 350°F, letting it cook for about 40/45 minutes or according to your oven’s characteristics.
Once cooked, let it cool and only remove from the pan when the cake is cold! Sprinkle the cake with powdered sugar and serve at the table!
