In the magazine More Sweets, which I often buy, I always find excellent desserts and many inspirations for various preparations. Today I cooked for my son, who particularly loves berries, this cake with almonds and berries that is filled with strawberries and blueberries BEFORE being baked!
Besides the sliced almonds on top, there is also almond flour in the dough; maybe I should have used a smaller baking pan(mine was 9 inches) because I barely managed to cover the red forest berries in the filling, but it turned out well nonetheless. Ingredients RECIPE CAKE WITH ALMONDS AND BERRIES
- 3/4 cup granulated sugar
- 3/4 cup Butter (soft)
- 1 1/4 cups almond flour
- 1 1/4 cups self-rising flour
- 2 medium eggs
- 1 pod vanilla
- 7 oz mixed berries (frozen or fresh)
- 3 tbsps sliced almonds
- to taste Heavy cream (or milk)
- to taste Powdered sugar (for decoration)

TO PREPARE THE RECIPE CAKE WITH ALMONDS AND BERRIES
In a bowl
put the almond flour, butter, sugar, flour, eggs, and vanilla seeds.
Mix the mixture with electric beaters to obtain a homogeneous dough.
If necessary, add cream or milk to make the mixture creamier: I had some open cream in the fridge and added 4-5 tablespoons.
Butter and flour a pan, pour in half the batter, leveling it with a spatula.
Then add the mixed berries and cover them with the rest of the batter
Cover the surface of the cake with nuts and berries with sliced almonds and bake in a preheated oven at 350°F for about 50-60 minutes.
Once baked, let it cool, then remove it from the pan, decorate with powdered sugar, and serve. Enjoy your meal!!
