I saw in a magazine the recipe for a cake with lemon jam and, being very curious, decided to prepare it.
The recipe is by Anna Moroni, but I decided to modify the quantities of the various ingredients, and it seems the attempt was successful!

I believe it can also be made with other different jams or preserves, the lemon gives a slightly bitter aftertaste which I personally loved, but let’s go to the kitchen to prepare the cake with lemon jam!

CAKE WITH LEMON JAM

Ingredients RECIPE CAKE WITH LEMON JAM

  • 2 medium eggs
  • 1.9 cups all-purpose flour
  • 2.5 tbsp neutral seed oil (I use corn oil)
  • 0.5 cup sugar
  • 1.25 cups lemon jam
  • 1 packet baking powder
  • 2 tbsp milk (only if needed)

FOR PREPARING THE RECIPE CAKE WITH LEMON PRESERVE

  • In a bowl capable whisk the eggs with the sugar.
    Now add the oil and half the amount of flour, continuing to stir, to mix the batter well.
    Add now the lemon jam always mixing with whisks and immediately after the remaining flour.

  • Check the consistency and add milk if needed for a smooth and soft batter.
    Add the sifted baking powder, working a little more on the batter.

  • Grease and flour the mold, pour the batter and bake at preheated oven at 350°F for 40 / 45 minutes, always using the toothpick test.

    Once cooked, let it cool completely on a cake rack and before serving the cake generously sprinkle with powdered sugar, as usual for me!

  • A simple homemade cake suitable for breakfast and family snacks that you can enjoy using different varieties of preserve or jam!
