The mascarpone is a very caloric cheese but so good that it’s impossible not to enjoy it in various sweet and savory preparations, and today I made this delicious cake with mascarpone, one of the best “simple” cakes I’ve ever eaten!

It is delightful in taste and extremely soft and light to the palate! It is a simple pantry cake, excellent if accompanied by seasonal jams, chocolate cream, but also fragrant and soft for the little ones’ snack…

Ingredients RECIPE CAKE WITH MASCARPONE

  • 3 Eggs
  • 1 1/4 cups Sugar
  • 2 tbsps Water
  • 8.8 oz Mascarpone
  • 1 2/3 cups Flour
  • 3/4 cups Potato starch
  • 3.4 oz Milk
  • 1 pack baking powder

  • Electric whisk
  • Stand mixer

Preparation Recipe Cake with Mascarpone

  • In a bowl, beat the egg yolks with sugar and water.

    While still beating with the electric whisk, add the mascarpone cheese.

  • Then add the flour, potato starch, and sifted baking powder and mix well with the whisk.

    Now pour the milk and continue to beat for a few minutes.

  • Now add the egg whites beaten until stiff and incorporate them with slow movements from bottom to top into the mixture just made.

  • Pour the mixture into a greased and floured mold and bake in a preheated static oven at 356°F for 40/45 minutes. Once cooled, decorate with powdered sugar and…enjoy your cake with mascarpone!

Tips and Notes

If you want to prepare the cake with mascarpone with also cocoa, simply replace the potato starch with cocoa powder and you can also substitute the milk with an equal amount of fruit juice….
