CAKE WITH MASCARPONE

The mascarpone is a very caloric cheese but so good that it’s impossible not to enjoy it in various preparations, both sweet and savory. Today, I made this delicious cake with mascarpone, one of the best “simple” cakes I’ve ever eaten!

It is delightful in taste and extremely soft and light to the bite! It’s a simple pantry cake, great if accompanied by seasonal jams or chocolate cream but also fragrant and soft for the little ones’ snack at home…

Ingredients RECIPE CAKE WITH MASCARPONE

  • 3 Eggs
  • 1 1/4 cups Sugar
  • 2 tbsps Water
  • 1 cup Mascarpone
  • 1 2/3 cups Flour
  • 3/4 cups Potato starch
  • 6 tbsps Milk
  • 1 packet Baking powder

Preparation Recipe Cake with Mascarpone

  • In a mixing bowl, beat the egg yolks with the sugar and water.

    Continuously beating with the electric whisk, add the mascarpone cheese.

  • Then add the flour, potato starch, and sifted baking powder, and mix well with the whisk.

    Now pour in the milk and continue to beat for a few minutes.

  • Now add the egg whites whipped to stiff peaks and fold them into the mixture just made, using slow movements from bottom to top.

  • Pour the mixture into a greased and floured pan and bake in a preheated static oven at 356°F for 40-45 minutes. Once cold, decorate with powdered sugar and… enjoy your cake with mascarpone!

Tips and notes

If you want to prepare the cake with mascarpone and also with cocoa, simply replace the potato starch with cocoa powder, and you can also replace the milk with an equal amount of fruit juice….
