My mom gave me a big bag of walnuts on Sunday, and I decided to make this cake with walnuts yogurt and honey, soft and very good, which was the perfect ending to the dinner I prepared yesterday with Andrea’s school friends.
It would have been fantastic to accompany it with whipped cream, but I didn’t want to overdo it, and… I guess you know why, darn scale!!!
P.S. Divide the doses in half for a 8-inch cake like I did, but follow along as we prepare the cake with walnuts yogurt and honey!
P.P.S. Milk is needed to soften the dough IF it is too thick, and the measurements are indicative: I don’t know for sure if your flour (not all absorb the same way; it depends on how they are stored, how long ago they were produced, etc.) and the rest of the ingredients mix like the ones I used in this cake! CAKE WITH WALNUTS YOGURT AND HONEY

Ingredients for CAKE WITH WALNUTS YOGURT AND HONEY RECIPE
- 3 3/4 cups all-purpose flour
- 1 packet baking powder
- 2 medium eggs
- 3 oz wildflower or acacia honey (Warm it if needed…)
- 1/4 cup brown sugar
- 1/2 cup butter
- 1 cup walnut halves
- 2 containers yogurt (125 ml each) (whole natural)
- 3 tablespoons milk (to soften the dough)
- as needed butter and flour (for the pan)

FOR THE PREPARATION OF THE CAKE WITH WALNUTS YOGURT AND HONEY RECIPE
Coarsely chop the walnuts with a knife or use a mixer intermittently.
Beat the whole eggs in a bowl with the sugar until frothy and light.
Add the liquid honey and blend for a couple of minutes.Now add the sifted flour with the baking powder, alternating with the melted butter and the walnuts and yogurt.
If needed, add a few tablespoons of milk (I used 3) to get a smooth, homogeneous, and not too dry batter.Now pour the cake with walnuts yogurt and honey batter into the previously buttered and floured pan and bake in a preheated oven at 350°F for about 45/50 minutes.
Always do the toothpick test to ensure it’s cooked, and once done, let it cool slightly, then serve the cake with walnuts yogurt and honey!
