The cake with white grapes and ricotta is delicate and soft, a great seasonal dessert that you can clearly make with other varieties of grapes, according to your taste!
The base of the sweet dough is simple, but the addition of ricotta gives it a special aroma and texture, and we can also flavor it with the seeds from the vanilla bean or with citrus peel.

Ingredients
- 1 cup cups ricotta
- 3 eggs
- 1/2 cup cups sugar (plus 2 tablespoons)
- 1 tablespoon tbsps baking powder
- 2 cups cups all-purpose flour
- 1 cup cups white grapes (only berries)
- 2 tablespoons tbsps rum
- 1/3 cup cups vegetable oil
- 1 tablespoon tbsps butter
- as needed powdered sugar

Steps
1) Wash the grape berries quickly and pat them dry with a clean cloth.
2) In a pan, place 1 tablespoon of butter and 2 tablespoons of granulated sugar, also adding the berries which I’ve cut in half and removed the seeds from.
3) Over low heat, let the fruit gently stew and flavor for 5/6 minutes, then let the mixture cool or at least warm up.
4) In a bowl, place the eggs, ricotta, and sugar, and with a hand whisk, mix well to eliminate any lumps that may form, obtaining a smooth and fluid mixture.
5) Now add the vegetable oil, the sifted flour with the baking powder, and lastly, add the white grape berries sauteed and flavored with rum.
6) Butter and flour or use a cake release in the non-stick and springform pan, and pour in the white grape and ricotta cake mixture, leveling the surface well.
7) Finally, bake at 350°F in static mode and cook for about 35/40 minutes or according to your oven’s characteristics.
8) Once baked, let it warm, then remove from the oven and unfold the cake onto the serving plate, dusting the cake with grapes and ricotta with powdered sugar.

1) White, red, or pink grapes, and feel free to use whichever you like best, and it would be better to use SEEDLESS grapes to skip an easy but… step
2) Instead of rum to flavor the halved berries, we can use sweet Marsala or just put sugar and water to gradually stew the berries in the syrup.
