  • 12 egg lasagna sheets (12 fresh egg pasta sheets)
  • 11 oz spinach, cooked, boiled
  • 1 cup ricotta (cow's milk)
  • 1 egg
  • 1 oz Grana Padano PDO (grated)
  • 4 oz mozzarella
  • to taste salt
  • to taste pepper
  • 2 cups béchamel sauce
  • 4 oz mozzarella (coarsely chopped)
  • 4 pinches salt
  • 1 pinch pepper

FOR THE PREPARATION OF THE RECIPE WHITE OVEN-GRATINATED CANNELLONI

  • For these creamy white lasagne sheets oven-gratinated I preheat the oven to 356/374°F first and start preparing the filling — the stuffing for the fresh pasta sheets that I used as cannelloni (I confess they were left over from the lasagne I made at Christmas).

    In a bowl I mix well the ricotta, the egg, the cheese and the cooked, well-drained spinach to remove as much water as possible.

    I finely chop the mozzarella (I used a block to speed things up without having to drain it to make it nicely dry) and add it to the mixture.

    I lay out each lasagna sheet on a work surface and place some of the filling on it, spreading it well with a spoon.

    I roll the sheet to resemble a cannelloni and place it on the baking dish that I have just “greased” with a layer of sauce béchamel on the bottom.

    I continue until the sheets are finished and then pour the remaining béchamel sauce over everything.

    I sprinkle the white cannelloni with the rest of the chopped mozzarella and add the grated Grana Padano.

    Now all that’s left is to bake this simple baked pasta with cannelloni filled with spinach, ricotta and mozzarella for about 30 minutes or according to the characteristics of your appliance.
