In the spirit of Carnival, here are caramelized fritters made with slices of BANANA that are firm and ripe.
These fritters are bites you can also prepare with other fruits like pineapple, apple, and pear. It’s important to let the batter rest before adding the fruit pieces and then move on to frying these caramelized puffs.
If you don’t love caramel, I suggest decorating the caramelized fruit fritters with chocolate topping, but let’s get into the kitchen to prepare these Carnival sweets and more….

CARAMELIZED FRITTERS

Ingredients for CARAMELIZED FRITTERS RECIPE
- 3 cups Flour
- 1 egg
- 16 g baking powder
- 1 cup Sugar
- 4 firm and ripe bananas
- 1/2 cup potato starch
- as needed peanut oil (for frying)
- as needed water (about 1/2 cup)
Tools for CARAMELIZED FRITTERS RECIPE
- Bowl
- Frying Pan
- Wok
Preparation
In a bowl mix the sifted flour with the baking powder and potato starch.
Then add the egg and enough water (about 1 cup) gradually until you get a smooth and homogeneous batter.
Let the batter rest for 10/15 minutes.
Peel the firm and ripe bananas into slices about 1/5 inch thick.
Dip them into the batter and fry them in oil at the right temperature (about 338°F).
Fry the fritters until you have golden and soft puffs that you will first place on absorbent paper to well-drain excess oil.
For the caramel place the sugar and water in a non-stick pan, and without stirring, let it darken to a brown color.
Turn off and let the caramel drip over the caramelized fruit fritters, and … enjoy your meal!!!
If you don’t want to add the caramel sprinkle with granulated or powdered sugar…
