In the spirit of Carnival, here are some caramelized fritters made with ripe and firm banana slices. These little fritters can also be prepared with other fruits like pineapple, apple, and pear. It’s important to let the batter rest before adding the fruit chunks and then proceed to fry these caramelized puffs. If you don’t like caramel, I suggest decorating the fruit caramelized fritters with chocolate topping. But let’s get into the kitchen to prepare these Carnival treats and more….

Ingredients CARAMELIZED FRITTERS RECIPE

  • 12.3 oz Flour
  • 1 egg
  • 0.56 oz Baking powder
  • 7 oz Sugar
  • 4 ripe and firm bananas
  • 2.1 oz Potato starch
  • as needed Peanut oil (for frying)
  • as needed water (about 3.4 fl oz)

Preparation CARAMELIZED FRITTERS RECIPE

  • In a mixing bowl, mix the sifted flour with the baking powder and potato starch.

    Then add the egg and enough water (about 1 cup) gradually until you obtain a smooth and homogeneous batter.

  • Let the batter rest for 10/15 minutes.

    Peel the ripe and firm bananas and slice them into 1/4-inch thick rounds.

    Dip them in the batter and fry them in oil at the right temperature (about 338°F).

  • Fry the fritters until you have golden and soft puffs that you will first place on absorbent paper to drain the excess oil well.

  • For the caramel, put the sugar and water in a non-stick pan and without stirring, let it darken to a brown color.

  • Turn off and let the caramel drizzle over the caramelized fruit fritters and… enjoy!!!

    If you don’t want to add the caramel, sprinkle with granulated or powdered sugar…
