CAULIFLOWER FLATBREAD

The cauliflower flatbread is incredibly delicious, and I confess I ate more than one serving between lunch and snack time, it’s amazing!

I only used breadcrumbs and Parmesan cheese and turmeric as a spice, but it wouldn’t be bad to try baking this oven-baked flatbread again by adding some paprika, a pinch of chili pepper, a bit of parsley …in short, we can vary it according to our taste!

The cauliflower is a vegetable rich in antioxidants, vitamins, minerals, and fiber, and there are over 80 different types of edible cauliflowers sold worldwide.

They can be divided into 4 categories, namely:

1) Italian varieties (white, Romanesco, brown, green, purple, and yellow cauliflower);

2) Northwestern European cauliflower (harvested in winter and early spring);

3) U.S. “cultivars” (harvested in summer and fall);

4) Asian cauliflower (grown in China and India).

Ingredients

  • 2 eggs
  • 2.8 oz Parmesan cheese (grated + 1 tablespoon before baking)
  • 1.2 lbs cauliflower (already cleaned)
  • 0.5 cup breadcrumbs
  • to taste ground turmeric
  • to taste salt
  • to taste pepper
  • to taste extra virgin olive oil

Steps

  • 1) The first thing to do to cook the cauliflower flatbread is to clean it by removing the central stalk and separating the florets one by one.

    2) Using the large-holed grater, grate the cauliflower and then place the result in a large bowl.

    3) Add the breadcrumbs, grated Parmesan cheese, eggs, the spice, and season with salt and pepper and 2 tablespoons of EVO oil.

    4) Mix the ingredients and preheat the oven to 374°F.

    5) Line a baking tray with parchment paper and then pour in the seasoned and flavored cauliflower mix.

    6) Add the breadcrumbs and grated Parmesan cheese that were set aside and sprinkle them over the surface of the flatbread, adding just a little more extra virgin olive oil, preferably using a special sprayer.

    7) Bake in the already hot oven, cooking for about 30 minutes or until the cauliflower flatbread is golden and crispy.

    8) If preferred, during the last few minutes, place it under the grill and get ready for tasting!
