Cheese Burek

Today another recipe made by my son, who now cooks every free moment of the week. This time he tried his hand at cheese burek (sirnica), a rich and tasty savory pie.
The burek is a traditional dish of Turkish cuisine, but it is also widely spread in various Balkan countries and there are numerous variations: with meat, with cheeses, with spinach, similar to the Greek spanakopita.
The original base that encloses the fillings is the yufta, a sheet slightly thicker than phyllo dough, which in this version Andrea used to prepare the savory pie.
The burek, byrek, or börek almost always maintains its characteristic spiral, snail-like shape, which remains almost unchanged even when the fillings and countries of origin change.

Ingredients

  • 5 sheets phyllo dough
  • 1 1/3 cups cow's milk ricotta (well-drained)
  • 5.3 oz feta
  • 1/2 cup Greek yogurt (whole)
  • 2 eggs
  • 1 tbsp pecorino cheese (grated)
  • 2 1/2 tbsp butter
  • to taste salt
  • to taste pepper

Steps

  • Place the ricotta in a sieve to lose its whey and be as dry as possible.

    Crumble the feta into a bowl, add the yogurt, eggs, pecorino, salt, pepper, and half of the melted butter.

    Add the ricotta and mix the mixture well.

  • Divide the filling into 3 equal parts.

    Place two sheets of phyllo dough on top of each other and brush with melted butter.

    Pour 1/3 of the filling and gently roll the dough over the filling and place the first spiral roll in the pan.

    Repeat with the other two parts of the filling and continue to make a spiral covering the entire surface of the pan (22/24 cm).

  • Brush the cheese burek with the remaining melted butter and bake at 375°F for about 35/40 minutes or until the surface is golden and puffed!

    Let it cool down and we are ready to taste!
