Cheese Triangles like Edam or Maasdam for these crackers suitable for snacks at aperitifs, very easy to make and tasty!
Perfect if accompanied with sauces, savory mousses that I provide just below with mortadella, salmon and/or tuna and also good for making croutons for appetizers!
After rolling out the dough and randomly shaping the triangles, I made small holes with a piping nozzle, but feel free to do as you like!

INGREDIENTS
- 2 oz cheese
- 1/2 cup water
- 2 cups flour
- 2 tbsps extra virgin olive oil
- to taste sweet paprika
- to taste salt

FOR THE PREPARATION OF THE CHEESE TRIANGLES RECIPE
Grate or mix the cheese in a food processor, adding the flour, EVO oil, and the spice, either sweet or hot paprika, as desired.
Gradually pour in the water, kneading the mixture until a smooth dough ball is formed.
Cover with plastic wrap or an overturned cup and let it rest for about 30 minutes.
Roll out the dough with a rolling pin to 1/8 inch thickness, then cut into triangles of various sizes. Use the nozzle to make small circles here and there.
Place the cheese triangles on a baking sheet lined with parchment paper.
In a glass, mix a tablespoon of water with one of EVO oil and brush this emulsion over the perforated cheese triangles. Bake at 392°F for about 10 minutes or a little more, depending on your home oven’s characteristics.
Once golden and crispy, let them cool and serve with your choice of savory mousse dips!
