Cheesecake with Fruit Coulis

The cheesecake with fruit coulis is a creamy dessert best served cold and made even more delicious with the addition of the fruit sauce (today with strawberries) that flavors and colors the dish.

This dessert is baked in the oven but shines at room temperature, pleasantly drizzled with strawberry cream!

I used the last strawberries found at the supermarket, but of course, we can also use berries, even frozen ones!

Ingredients for CHEESECAKE with FRUIT COULIS

  • 7 oz digestive biscuits
  • 7 tbsp butter (melted)
  • 2 1/2 cups Greek yogurt (plain)
  • 3 eggs
  • 1/2 cup sugar
  • 1/2 cup whipping cream
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 pinches lemon zest (grated)
  • 1 cup strawberries (or peaches or cherries)
  • 1/4 cup powdered sugar
  • 1 orange (or lemon, juice only)

FOR THE PREPARATION OF THE RECIPE CHEESECAKE with FRUIT COULIS

  • For the base melt the butter in the microwave or in a pan over very low heat.

    Finely chop the biscuits with a knife or in a mixer and mix them with the melted butter, stirring well to thoroughly coat the biscuits.

    After lining a mold with baking paper, cover it with this mix, pressing it down very well with a spoon or another tool as desired.

  • In a bowl, mix the yogurt, cream, eggs, sugar, cornstarch, and flavorings like vanilla and grated organic lemon zest.

    Pour this mix, which can also be blended with electric beaters, onto the cheesecake base, smoothing the cream well.

    Now bake for about 30/35 minutes, depending on your oven’s characteristics.

    Let the creamy cheesecake cool completely before removing it from the mold.

  • Quickly wash the strawberries and then blend them with an immersion blender.

    Pour this mixture into a saucepan, add lemon juice and sugar, and let it thicken and flavor over moderate heat for a few minutes.

    Let it cool slightly, then use this strawberry cream to top the creamy cheesecake.

    Keep in the fridge until serving.
