Cherry Ripple Log Without Baking

I love cherries, and when I saw a no-bake, cold dessert with these delights on a blog, I decided to make this delicious cherry ripple log, which, when stored in the freezer, can last for 2 weeks… but it will be gone much sooner, ha ha!

Ingredients for CHERRY RIPPLE LOG WITHOUT BAKING

  • 2 cups Heavy whipping cream
  • 14 oz Sweetened condensed milk (1 can)
  • 1 tbsp Vanilla extract
  • 1 cup cup Syrup cherries (for me Fabbri)
  • 2 tbsps Cherry jam
  • 5.3 oz Dark chocolate (for the topping)
  • 1/4 cup Heavy whipping cream (for the topping)
  • to taste Mini meringues (for the topping)
  • to taste Colored sprinkles (for the topping)

  • Loaf pan

FOR THE PREPARATION OF THE CHERRY RIPPLE LOG WITHOUT BAKING

  • First,

    whip the heavy whipping cream until you get a firm and fluffy mixture.
    Now, gradually add the sweetened condensed milk and vanilla extract.

  • Carefully fold in the ingredients using gentle up-and-down motions with a flexible spatula.

    Mix the cherry jam with a tablespoon of the cherry syrup.

  • Drain the cherries using a sieve to remove the remaining syrup and set them aside.

    You can save some of the syrup to pour over the sliced servings at the table… it’s your choice!

  • Line a 11-inch loaf pan with plastic wrap.

    Pour in about half of the mixture and spread the cherries and a bit of the jam/syrup mixture over it.

  • Now pour the remaining ice cream base, then the cherries, and the syrup and jam mixture.

    Using a long skewer, swirl the mixture with circular motions and place the cherry ripple log in the freezer overnight.

  • After the time has elapsed, melt the dark chocolate with the cream and let it cool to room temperature, stirring occasionally.

    Remove the semifreddo and place it on a serving plate, decorate it with the melted chocolate, and sprinkle mini meringues and colored sprinkles over it before the chocolate sets.

  • Return the ice cream cake to the freezer until you’re ready to enjoy it with your family and friends, taking it out about 10 minutes before serving! Enjoy your cherry ripple log!
