Today, a stew with these tasty chicken bites in walnut sauce, a very simple dish for chicken, tender and juicy with this creamy walnut-based sauce.
I left the nuts coarsely chopped and added a lot of rosemary and a not too big clove of garlic because I don’t like to kill others with strong smells when conversing…
I used milk which I let reduce and thicken, but if you’re in a hurry, and lucky you, don’t fear the scale, use cream to sauce these excellent chicken bites in walnut sauce….

CHICKEN BITES IN WALNUT SAUCE

INGREDIENTS FOR CHICKEN BITES IN WALNUT SAUCE RECIPE
- 14 oz chicken breast
- to taste Flour
- to taste Extra virgin olive oil
- 1 cup Milk
- 2.5 oz Walnut kernels
- 3 sprigs rosemary (fresh and chopped)
- 2 leaves bay leaf
- 1 clove garlic
- to taste salt and pepper
- to taste vegetable broth (or water)

FOR THE PREPARATION OF THE CHICKEN BITES IN WALNUT SAUCE RECIPE
For the sauce, in the mixer, put the rosemary needles, garlic clove, and walnut kernels.
Blend everything to have a mixture not too fine for me, but you can choose the texture you prefer for the chicken bites sauce.
In a pan, put a little extra virgin olive oil and the aromatic mix.
Sauté over medium heat for a few minutes, then add about a tablespoon of flour and mix well the mixture.
Pour the milk, season with salt and pepper, and continue always over low heat until you have a creamy consistency.
Cut the chicken breast into chunks and coat them evenly with flour*.
In another casserole, put some EVO oil, and when it sizzles, add the floured chicken bites.
Continue cooking, adding a little broth if needed for about 25 minutes, adding the bay leaf.
Pour the walnut sauce and leave on the heat for a few more minutes, just enough time for the sauce to coat the chicken bites, wrapping them completely.
Adjust salt and pepper if needed, and serve the chicken bites in walnut sauce at the table. *IF YOU WANT TO COAT THEM FASTER, PUT THE MEAT AND FLOUR IN A FOOD BAG AND SHAKE IT… the job is done!!!
