Chicken Bites with Ginger and Lemon

This main course of chicken bites with ginger and lemon is one of the classic recipes I enjoy having for dinner: it’s tasty, easy, and economical!

Lemon and ginger pair excellently, and the taste is amazing!

We can prepare chicken with lemon and ginger using parts of the bird or even small pieces or strips from the chicken breast, whichever is more convenient, especially if you have little ones at home!

Chicken is a widely used meat in cooking for its light flavor, low cost, and because it pairs well with many delicious combinations.

Chicken meat and poultry, in general, lend themselves to various cooking methods: pieces of chicken cooked in a pan perhaps with the addition of rosemary, chicken stewed in a pot either plain or with tomatoes, roasted chicken in the oven with the classic side of potatoes, grilled chicken which is less common but always tasty, fried chicken perhaps coated in batter first and then in a crispy, tasty breading. Don’t forget that chicken is also added to broths!

Chicken pairs wonderfully with many vegetables, allowing us to prepare recipes like chicken with peppers, chicken with potatoes, chicken with mushrooms, and chicken with mixed vegetables.

The best spices to accompany a chicken recipe are curry, chili, paprika, zaatar, and cumin seeds.

CHICKEN BITES WITH GINGER AND LEMON

Ingredients RECIPE CHICKEN BITES WITH GINGER AND LEMON

  • 1.76 lbs chicken (cut into pieces)
  • 2 lemons
  • 1 slice fresh ginger
  • 1/2 cup dry white wine
  • 2 shallots
  • 1 tbsp brown sugar
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste vegetable broth

FOR THE PREPARATION OF THE CHICKEN BITES WITH GINGER AND LEMON RECIPE

  • 1) In a pan, I put 3 tablespoons of extra virgin olive oil and brown the chicken pieces over medium heat on all sides.

    2) I remove the chicken and keep it warm on a serving plate, also removing the fat created during cooking.

    3) I pour a couple of tablespoons of EVO oil into the pan and add the chopped shallots. When they are browned, I add the chicken pieces, then deglaze all the ingredients with dry white wine.

    4) I season with salt and pepper, add a couple of ladles of vegetable broth, and continue cooking for about 35 minutes, ensuring the meat is well cooked and tender.

    5) Halfway through the cooking of the chicken, we prepare the sauce with ginger and brown sugar.

    6) In a clean small pan with a bit of water, I blanch the peel of one lemon cut into strips using the peeler for a couple of minutes.

    7) I squeeze the juice of the 2 lemons, filtering the juice with a strainer.

    8) In a small pot, I caramelize the brown sugar with 4/5 tablespoons of water.

    9) I then add the juice, the lemon peels, and the piece of peeled and grated ginger, leaving it over low heat for a couple of minutes.

    10) I pour this sauce over the chicken bites and continue cooking for 15/20 minutes, serving this hot and steaming main course.
