CHICKEN BITES WITH GINGER AND LEMON

This second meat dish, the chicken bites with ginger and lemon, is one of the classic recipes I enjoy eating for dinner: it is tasty, easy, and economical!

Lemon and ginger pair wonderfully, and the taste is amazing!

We can prepare chicken with lemon and ginger using different parts of the animal or pieces or strips from chicken breast, whatever is more convenient for you, even if you have little ones at home!

Chicken is a meat widely used in cooking for its light flavor, affordability, and because it lends itself to many delicious combinations.

The chicken meat and poultry, in general, lend themselves to various cooking methods: chicken pieces cooked in a pan perhaps with rosemary, stewed chicken in a pot either plain or with tomato, roasted chicken in the oven with the classic side of potatoes, less common but always tasty grilled chicken, fried chicken perhaps previously battered and then rolled in a crunchy and delightful coating, and not to forget, chicken is also used in stocks!

Chicken pairs wonderfully with many vegetables, and we can prepare recipes like chicken with peppers, chicken with potatoes, chicken with mushrooms, and chicken with mixed vegetables.

The best spices to accompany a chicken recipe are curry, chili pepper, paprika, zaatar, and cumin seeds.

CHICKEN BITES WITH GINGER AND LEMON

Ingredients RECIPE CHICKEN BITES WITH GINGER AND LEMON

  • 1.76 lbs chicken (cut into pieces)
  • 2 lemons
  • 1 slice fresh ginger
  • 1/2 cup dry white wine
  • 2 shallots
  • 1 tablespoon brown sugar
  • to taste extra virgin olive oil
  • to taste salt
  • to taste pepper
  • to taste vegetable broth

FOR THE PREPARATION OF THE RECIPE CHICKEN BITES WITH GINGER AND LEMON

  • 1) In a pan, place 3 tablespoons of extra virgin olive oil and brown the chicken pieces over medium heat from all sides.

    2) Remove the chicken and keep it warm on a serving plate, also removing the fat that has formed during cooking.

    3) Pour a couple of tablespoons of EVO oil into the pan and add the chopped shallots. When they are browned, add the chicken pieces, then deglaze all the ingredients with dry white wine.

    4) Season with salt and pepper, pour a couple of ladles of vegetable broth and continue cooking for about 35 minutes ensuring that the meat is well cooked and tender.

    5) Halfway through chicken cooking, we prepare the sauce with ginger and brown sugar.

    6) In a clean saucepan with an inch of water, blanch the zest of a lemon cut into strips with the peeler for a couple of minutes.

    7) Squeeze the juice of the 2 lemons filtering the juice with a sieve.

    8) In a small pot, caramelize the brown sugar with 4/5 tablespoons of water.

    9) Then add the juice, the lemon peels, and the piece of peeled and grated ginger, keeping it on low heat for a couple of minutes.

    10) Pour this sauce over the chicken bites and continue cooking for 15/20 minutes and serve this hot and steaming second course at the table.
