Among various meats for preparing main courses, chicken, or rather poultry in general, holds a privileged place because it is lean white meat and is cost-effective.
Today I cooked the recipe of chicken breast fillets with gorgonzola and some cherry tomatoes to add even more flavor and color to the dish.
Gorgonzola is a cheese that is particularly excellent for tasty dressings for pasta, fantastic for appetizers and finger foods, and delicious even on its own with chestnut honey, which, being bitter, balances the flavor for me.
The preparation is also quite quick, so it’s perfect to make even at the last minute. But off to the kitchen, follow me as we start the recipe for chicken breast with gorgonzola!

CHICKEN BREAST WITH GORGONZOLA

Ingredients for CHICKEN BREAST WITH GORGONZOLA
- 4 chicken breast fillets
- 4 slices prosciutto crudo
- 5.3 oz gorgonzola (I use sweet)
- 1/4 cup Milk
- 10 cherry tomatoes
- to taste salt and pepper
- to taste extra virgin olive oil

FOR THE PREPARATION OF CHICKEN BREAST WITH GORGONZOLA RECIPE
Take each chicken breast filet chicken and wrap it in a slice of prosciutto crudo each.
In a non-stick pan, add a dash of extra virgin olive oil and sear the wrapped fillets, placing them first on the side where the slice of cold cut overlaps to seal it well.
After a couple of minutes, turn it and sear it on the other side as well.
Turn off the heat and set aside.
In a clean pan, put the gorgonzola and mix it with the milk over very low heat.
I indicated half a glass but assess the cream’s density that forms during cooking.
Once melted, proceed to prepare the baking dish for finishing the cooking.
Take the baking dish and arrange the chicken breast fillets with prosciutto crudo.
Pour over the gorgonzola sauce and proceed by baking at 392°F for 10 minutes.
Now add the well-washed, dried, and quartered cherry tomatoes on top.
Put back in the oven for another 10 minutes, and adjust the salt and pepper, considering that the gorgonzola cheese has a significant flavor anyway. Turn off the oven.
Add some finely chopped basil leaves and serve the chicken breast with gorgonzola hot and steaming! Enjoy this tasty recipe!
