Chicken, Celery, and Corn Detox Salad

Chicken, celery, and corn detox salad dressed with a light yogurt-based sauce delicately flavored with mustard.

Surely, during the end-of-year holidays, we’ve all indulged a bit, enjoying some delicious lasagna, a filled panettone, a piece of nougat, and it’s not a bad idea to eat lower-calorie dishes in January to get back to a less fatty and caloric diet.

This single-course salad is tasty without being too rich and it’s perfect for a meal during our day, which is often rushed between family, work, home, and other daily commitments!

Thecelery is a low-calorie vegetable (100 g of celery contains 20 kcal / 84 kj)  and it’s recommended to consume it fresh and raw. It contains mainly potassium, magnesium, and calcium, vitamin C, vitamin K; it also includes lutein, a powerful antioxidant that protects the brain. Celery is composed of about 90% water; for this reason, it is an excellent diuretic and purifying.

Ingredients for CHICKEN, CELERY, AND CORN DETOX SALAD

  • 4 fillets chicken
  • 1 package corn
  • 2 celery stalks
  • 1 package 0% yogurt
  • 1 tablespoon mustard
  • 3 tablespoons extra virgin olive oil
  • 1 1/2 lemon
  • to taste salt and pepper

PREPARATION OF CHICKEN, CELERY, AND CORN DETOX SALAD

  • Clean the chicken fillets from any fat residue or small bone parts.

  • In a non-stick bottom saucepan with 1 tablespoon of oil, cook on both sides and leave covered.

  • Clean from strings and wash the celery stalks.

    Then cut them into thin sticks about 1.5 inches long.

    Drain the corn from the preserving liquid and rinse it under running water.

  • In the bowl, now add the chopped chicken, celery sticks, corn, and mix everything well.

  • For the dressing combine the non-fat yogurt with the Evo oil, then adjust with salt and pepper.

  • Now pour the sauce over the detox salad and with a spoon, blend the flavors well before serving it on the table.
