Chicken Scallops with Mushrooms

An economical and tasty second course with white meat: chicken scallops with mushrooms from today’s recipe on the blog!

  • 4 slices chicken breast
  • 14 oz mushrooms (mixed pioppini and champignon for me)
  • 1 clove garlic
  • 1 tbsp chopped parsley

Preparation for Chicken Scallops with Mushrooms

  • To prepare chicken scallops with mushrooms, start by slightly pounding the chicken breast slices to make them thinner, then flour them, removing the excess.

  • In a pan (non-stick is better), add a knob of butter and arrange the floured chicken in a single layer.

  • Let them brown on both sides over medium-high heat, then season with salt and pepper.

    Keep the slices warm on a separate plate and continue preparing the chicken scallops with mushrooms.

  • In the same pan, add a drizzle of oil with the garlic clove, and once it’s golden, add the cleaned mixed mushrooms using a damp cloth.

    Continue cooking over high heat, letting the liquid evaporate, and add the chopped parsley, adjusting the seasoning.

  • When the mushrooms are cooked, add the tender and tasty chicken scallops, let them flavor for a few minutes, and serve.

    Chicken scallops with mushrooms are an easy and appetizing preparation for everyday family meals!

  • If you want a thicker sauce, you can add a few tablespoons of béchamel or add a tablespoon of flour dissolved in a glass of water to the pan and let it thicken with the cooking juices.
