Chickpea Flour Fritters

More than chickpea flour fritters this recipe should be called a giant fritter given the thickness with which I prepared this delicious and tasty recipe with chickpea flour!

Honestly, for quite some time, the package of this particular flour has been spinning around in my hands… you know when you grab an ingredient in the pantry and you always end up with the same thing?
It almost seemed like a subliminal message which today I couldn’t resist, so here I am with these homemade chickpea flour fritters thick and …delicious eh eh!!

The recipe is very simple and to the chickpea flour and the necessary water I only added a generous chop of fresh rosemary that I have on my balcony…

Like any fried food, it’s crispy and tasty if eaten immediately as soon as it’s drained from excess oil on special paper….. but why am I even saying this, you already know it very well ^_^!!!

The chickpea flour fritters are a typical recipe from Palermo and are now recognized street food around the world!

These delicious fritters made with chickpea flour are very tasty and can be varied by adding not only rosemary but also parsley or fennel seeds!

Ingredients

  • 2.5 cups chickpea flour
  • 4 cups water
  • to taste rosemary
  • 2 pinches Fine Salt
  • 2 pinches black pepper

Preparation of Chickpea Flour Fritters

  • • Mix the chickpea flour with water using a hand whisk to avoid lumps.

    Also add a very fine chop of fresh rosemary.

    Pour this mixture into a saucepan and keep stirring over moderate heat.

  • • Slowly the mixture will thicken and tend to detach from the sides of the pan, much like choux pastry does before adding eggs!

    Give it one last stir and season with salt and pepper.

    Pour the mixture into a tray lightly greased with oil and let it cool completely.

  • • The mixture of chickpea flour fritters will thicken and you can cut it into diamonds, squares, or large pieces like I did!

  • Fry the chickpea flour fritters in hot seed oil and… Enjoy with the recipe of the fritters!

In short, chickpea flour has a particular taste and is used in many many recipes like farinata, meatballs!
