A few days ago, scrolling through Instagram, I saw a chef (Sebastian Fitarau) making a red cabbage salad that immediately intrigued me. Just in those days, I had just bought red cabbage at Esselunga and decided to try it right away, also because it’s an ingredient that Andrea loves and that I often use in our house in salads or slightly sautéed in a pan and seasoned with balsamic vinegar.
So, I prepared a chickpea salad with red cabbage, enriched with walnuts and apple slices, a simple yet very balanced combination, where the slightly sweet flavor of the fruit and the crunchiness of the walnuts perfectly match with the chickpeas and red cabbage. The result is a fresh, colorful, and nutritious salad, ideal to serve as a light single dish, but also perfect as a healthy side dish to accompany meat or fish mains.

- 1 Red Delicious apple (Stark)
- 4.2 oz cooked chickpeas
- 1.1 oz walnut halves
- 1 carrot (julienne)
- to taste extra virgin olive oil

Steps
Clean the red cabbage by removing the outer leaves and the hardest central part and slice thinly.
Peel the red apple, cut into slices and lightly drizzle with oil to prevent it from turning brown.Peel the carrot and cut into julienne.
Drain and rinse the chickpeas well.
Coarsely chop the walnuts.Then combine the cabbage, apple, carrot, chickpeas, and walnuts in a large bowl.
Season with extra virgin olive oil, salt, and pepper, and maybe a few fresh thyme leaves.Gently mix to combine all the ingredients.
