Among legumes, chickpeas are those that I often use in the kitchen even without any preparation, simply boiled and seasoned with extra virgin olive oil, a drop of balsamic vinegar, and some fresh sage leaves that this year have grown very lush and fragrant.
Chickpeas in Spicy Tomato Sauce, I would say chickpeas all’arrabbiata, are a perfect side dish to accompany a slice of grilled or boiled meat or fish but they are also not bad as a condiment for a short pasta dish!
Chickpeas are rich in proteins and fibers and help regulate intestinal function.
Chickpeas also control blood pressure and increase the levels of the good HDL cholesterol while helping to reduce those of the bad LDL.
Chickpeas contain many minerals including phosphorus, potassium, and calcium, as well as vitamins C and B group.

Ingredients for the Chickpeas in Spicy Tomato Sauce Recipe
- 1 onion (small)
- 1 clove garlic
- 2 packages cooked, boiled chickpeas
- 10.58 oz tomato puree
- 3 tbsp extra virgin olive oil
- to taste hot pepper flakes (my choice)
- to taste salt
- to taste parsley

FOR THE PREPARATION OF THE CHICKPEAS IN SPICY TOMATO SAUCE RECIPE – CHICKPEAS ALL’ARRABBIATA
1) In a saucepan, add the extra virgin olive oil and once it sizzles, add the finely chopped white onion and garlic and let it all flavor and brown.
2) Remove the garlic and add the drained boiled chickpeas from the preservation liquid and quickly rinse them under running water;
3) Stir and let them flavor for a couple of minutes;
4) Add the tomato sauce and hot pepper and season the chickpeas in spicy tomato sauce with salt and pepper.
5) Leave on moderate heat for about ten minutes and before serving sprinkle the legume side dish with freshly chopped parsley.

1) If you have dry chickpeas or prefer to use legumes in this version, soak them in cold water using about 600 milliliters of water for every 100 grams of dry chickpeas.
2) In case of cooking dry chickpeas or legumes in general, it is advisable to add baking soda to the soaking water (about 12 hours) to soften the legumes, and the proportions are about half a tablespoon per kilo of beans, chickpeas, etc. After soaking, rinse them and then place them in a casserole for boiling.
