Chocolate and Amarena Cherry Layered Cake


Chocolate and Amarena Cherry Layered Cake with many layers of soft Sponge Cake and a double filling of chocolate cream and creamy mascarpone and amarena mousse…mmmmhhh delicious!

I didn’t soak the thin layers of cake because they are very thin, and I provide various recipes to make the cake mixture, and if you prefer, you can find pre-made sponge cake circles at some supermarkets (I bought them, and they’re very soft at Famila in San Lazzaro di Savena, 2 steps from Bologna).

Ingredients for CHOCOLATE AND AMARENA CHERRY LAYERED CAKE

  • 6 thin sponge cake layers (10 inch diameter)
  • 2 cups heavy cream
  • 8.8 oz mascarpone
  • 3 tbsp powdered sugar
  • 1 jar chocolate and hazelnut cream (for me Nutella)
  • 7 oz dark chocolate
  • to taste amarena cherries in syrup (for me Fabbri)

FOR THE PREPARATION OF THE CHOCOLATE AND AMARENA CHERRY LAYERED CAKE RECIPE

  • Following the above recipe for Sponge Cake, make the base of our cake, or get a ready-made cake from your trusted baker or the bases found at the supermarket.

  • If we make the cake, then cut layers about 0.6 inches high each: for the cake in the photo, there are 6 layers!

  • Let the chocolate and hazelnut cream soften at room temperature by placing it for a few seconds in the microwave or mixing it with a spoon left for a while under the hot water stream and then properly dried off.

  • Whip the heavy cream and lastly add the soft mascarpone and powdered sugar.

  • Place the first layer of cake on the serving plate and spread a little chocolate cream, smoothing everything well.

  • Layer the cream with the second layer of sponge cake, then add the cream of whipped cream and mascarpone.

    Add some amarena cherries in syrup: I’m a fan, so I added a lot!

  • Continue layering alternately with creams and finishing with the sixth thin layer of sponge cake.

    Cover the entire chocolate and amarena cherry layered cake with whipped cream and mascarpone cream, covering the sides and the top completely.
