A tall soft layered cake CHOCOLATE BON CAKE with a genuine homemade dough, super soft cream, and some Easter-themed decorations since Easter is fast approaching!
The dough is simple with unsweetened cocoa powder and the procedure is the classic one with a first step to whip eggs and sugar into a froth and then follow up by adding the powders as they are often called in baking.
We can fill the chocolate bon cake with a white or dark chocolate ganache, a caramel mousse, and so much more!

- Spatulas

- Knives
- Parchment Paper
Steps
1) First, I preheat the oven to 350°F (static mode) and pour into the bowl of the stand mixer the eggs, beating them with the sugar at medium speed until I obtain a light and fluffy mass.
2) I then add the vanilla extract and the sifted flour with unsweetened cocoa powder, combining everything at very low speed or using a flexible spatula or a marisa.
3) I adequately grease (with butter, oil and flour, or baking spray or parchment paper) a 8-inch circular pan and carefully pour in the batter, then bake for about 30 minutes or until done, considering our home ovens.
4) While the soft and chocolaty cake cools, preferably on a wire rack, I prepare the filling.
5) In a large bowl or in the stand mixer, I put the mascarpone and start softening it with a first round with the beaters; then I add the cream cheese, the powdered sugar, and the very fresh liquid cream, always continuing to whip with the beaters of the hand mixer or stand mixer.
6) Separately, I coarsely chop the mixed chocolate eggs according to your personal taste.
7) Now with a sharp knife, I cut the simple and delicious chocolate cake into 3 parts, placing them close to each other.
8) I place the base on the serving dish and fill it with some of the cream and add some pieces of chopped Easter eggs.
9) I cover the second layer of chocolate bon cake and cover with the fabulous delicate white cream and add the chocolate Easter eggs.
10) Lastly, I place the third and final chocolate layer and with the remaining cream, I cover and level well all parts (top and sides) of the chocolate bon cake.
11) Since Easter is approaching, to finish and decorate the chocolate cake, I added Kinder bunnies, sugar carrots (from Aldi supermarket), and always sugar flowers but as always…the final choice is yours!
12) The chocolate bon cake decorated with an Easter theme is a breath of delicacy, a true delicate and delicious mousse when tasted…Enjoy your meal!

Annalisa says…
1) The base of the bon cake is a chocolate cake but as always we can make a regular base, a sponge cake, a pound cake, a Margherita cake, a 7 jar yogurt cake and fill it with simple whipped cream and chocolate chips, mascarpone cream, and decorate it with edible flowers like daisies and violets and …billions of other great creams or decorations to our personal taste!
2) We can prepare the chocolate bon cake a day before by filling it but decorating it with sugars, etc. just a moment before serving it at the table!
