CHOCOLATE Cake with Apples

Chocolate cake with apples, a soft plumcake with cocoa and lots of apple pieces that make it even more delicious!

I always thought, wrongly, that apples and chocolate weren’t a good match, but I must admit, this cake is exquisite and very satisfying!

CHOCOLATE CAKE WITH APPLES

Ingredients for CHOCOLATE CAKE WITH APPLES

  • 3 apples (I use Golden)
  • 2 1/8 cups all-purpose flour
  • 3 medium eggs
  • 2/3 cup sugar (+ 2 tablespoons)
  • 1 teaspoon baking powder (heaping)
  • 3/4 cup vegetable oil (I use corn or any neutral oil)
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup liquid cream (unwhipped)
  • 1 teaspoon vanilla extract
  • 1 pat of butter (for the apples)
  • as needed butter and flour for the pan (10 x 4 inches loaf pan)

Tools for CHOCOLATE CAKE WITH APPLES

  • Kitchen scale
  • Electric whisk
  • Spatula
  • Bowl
  • Baking pan
  • Sieve

FOR THE PREPARATION OF CHOCOLATE CAKE WITH APPLES

  • Wash, peel, and core the apples chosen.

    Cut them into slices, then into cubes.

    In a pan, put a pat of butter and 2 tablespoons of sugar, and as it sizzles, add the apple cubes, letting them cook gently for 10 minutes.

    Set aside and proceed to make the chocolate cake with apples batter.

  • In a large bowl, put the eggs and sugar and whip with electric beaters for 7/8 minutes to obtain a light and fluffy mixture.

  • Gradually add the liquid vanilla extract, neutral vegetable oil, and liquid cream, always mixing with the electric beaters.

  • Sift the flour with cocoa and baking powder, and pour it all into the previously mixed liquids.

    Stir with the electric beaters at low speed, and you’ll get a very creamy mixture!

  • Pour the mix into the chosen pan, previously buttered and floured, leveling well.

    Then arrange the sautéed apples with butter and sugar and bake in a preheated oven at 350°F for about 40 minutes or according to the characteristics of your oven.

    As always, the toothpick test is the key, and it should come out dry and clean!

  • Once the cake with apples is cooked, turn off the heat and let it cool for about 15 minutes.

    Now take it out of the oven and remove from the pan, letting the cocoa fruit cake cool completely.

  • Before serving, I dusted with the inevitable powdered sugar and accompanied it with whipped cream.
