INGREDIENTS
- 1 package shortcrust pastry
- 1 liter milk (we can also divide half milk and half liquid cream)
- 6.35 oz dark chocolate (+ 0.70 oz to crumble as decoration)
- 6 oz sugar
- 2/3 cup cornstarch
- 3 eggs
- 1 pod vanilla (to extract the seeds)

FOR THE PREPARATION OF THE CHOCOLATE FLAN PATISSIER RECIPE
In a saucepan, I put the milk with the chocolate and let the dark chocolate melt over low heat.
In a bowl, I beat the eggs with sugar and cornstarch (or maizena).
I line the mold with parchment paper and place the shortcrust pastry covering part of the outer circle edges, and with the tines of the fork, I make some holes in the bottom of the tin.
I then pour the chocolate mixture on this pastry shell shortcrust and bake in a preheated oven at 350°F, cooking for 40/45 minutes or until when inserting a skewer, a knife in the mixture comes out dry!
I turn off and let it cool perfectly, I would say hours not minutes!
After the cooling time, we are ready to taste the chocolate flan patissier not before adding some dark chocolate shavings on the surface!
