Chocolate Salami with Goji Berries, Raisins, and Almonds is an alternative dessert with the famous goji berries and dried fruits. The goji berries are rich in antioxidants, contain a good percentage of vitamin C, regulate blood sugar, and much more. They are generally consumed dried and then rehydrated in water as is done with sultanas. For the best enjoyment, mix them with yogurt and/or fresh fruit salad. Ingredients for CHOCOLATE SALAMI WITH GOJI BERRIES, RAISINS, AND ALMONDS

  • 7 oz Digestive biscuits
  • 2 oz Unsweetened cocoa powder
  • 9 tbsp Butter (melted)
  • 2 tbsp Sugar
  • 2 tbsp Goji berries (DEHYDRATED)
  • 1 tbsp Sultanas
  • 2 tbsp Blanched almonds (chopped)
  • as needed Milk
  • as needed Powdered sugar (for the final coating)

PREPARATION OF CHOCOLATE SALAMI WITH GOJI BERRIES, RAISINS, AND ALMONDS

  • Soak the goji berries and the raisins separately in lukewarm water for about 15 minutes.

    Crumble the digestive biscuits and place them in a bowl.

  • After the time has passed, squeeze and dry the goji berries and raisins with kitchen paper, and add them to the crumbled biscuits.

    Then add the sugar, melted butter, almonds, and unsweetened cocoa.

  • Mix everything well, adding the milk little by little.

    Shape the mixture into a salami on a sheet of parchment paper.

    Wrap the chocolate salami with GOJI BERRIES, raisins, and almonds securely and place it in the freezer for at least 3 hours.

  • Then sprinkle the chocolate salami with goji berries and raisins with powdered sugar, slice it, and serve it, remembering to take it out of the freezer at least 10 minutes before enjoying it!
