Christmas Red Berry Ring Cake

Christmas Red Berry Ring Cake is a simple dessert glazed and decorated with gummy candy trees, trees in sugar paste, golden chocolate sprinkles by Decora, and Christmas sugar figurines. The cake has a very pleasant taste, not too sweet, but the sugar and water glaze compensates for this and makes it delicious!

Ingredients CHRISTMAS RED BERRY RING CAKE RECIPE

  • 1 3/4 cups All-purpose flour (+ for the red berries)
  • 2 medium eggs
  • 1/2 cup sugar
  • 1 cup cups ricotta
  • 3/4 cup dried red berries (or candied fruits or chocolate chips)
  • 1 1/2 packet baking powder
  • to taste organic lemon zest
  • to taste powdered sugar
  • running water
  • to taste golden sprinkles (chocolate)
  • to taste gummy candies (like Valda for me)
  • to taste sugar paste
  • toothpicks
  • to taste sugar figurines (Christmas themed)

Preparation CHRISTMAS RED BERRY RING CAKE RECIPE

  • First, put the red berries in the freezer and proceed to make the batter.
    In a bowl, mix the ricotta with the sugar using a hand whisk.

  • Add the egg yolks and the grated zest of half a lemon, preferably organic.

    Add the flour sifted with baking powder, mixing and blending well.

  • Add the cold and slightly floured dried red berries.

    Finally, fold in the beaten egg whites.

  • Pour the batter into the greased and floured mold. Bake the Christmas red berry ring cake in a preheated oven at 338°F.

  • Let it bake for about 45 minutes or until done, and the usual skewer test will confirm it.

    Once finished baking, let the Christmas ring cake cool completely, preferably on a wire rack.

  • For the glaze, mix plenty of powdered sugar with very little running water, stirring vigorously. Pour the glaze over the ring cake and before it sets, sprinkle with golden sprinkles, placing the gummy candy trees (skewered on toothpicks) and sugar figurines.

    Roll out the sugar paste and with cookie cutters, cut out trees or stars or whatever you like, then place them on the glaze.

  • Clearly, the GLAZE is sensitive to humidity, so if in doubt, proceed to decorate and glaze only a short time before serving the Christmas red berry ring cake.
