Christmas Stuffed Tomatoes

The Christmas stuffed tomatoes are a quick and fun idea to add quick dishes to the savory buffet during this 2020 end-of-year holiday period.
You can vary the filling of this tasty idea for the Festive menu by using a mix of mascarpone, ricotta, robiola, creamy cheese like Philadelphia, and similar.
I like to season this cheese and dairy mixture with parsley, salt, pepper, and a drizzle of oil.
How to vary the aromas of Santa-filled tomatoes? Remove the parsley and add a fine chop of chives, which are great, or put some basil, what do you think?

Christmas Stuffed Tomatoes

Ingredients

  • 4 tomatoes
  • 5.3 oz ricotta
  • 5.3 oz creamy cheese
  • to taste salt
  • to taste pepper
  • to taste parsley
  • to taste extra virgin olive oil
  • 8 cloves
  • 4 red currant berries

Recipe Preparation for Christmas Stuffed Tomatoes

  • For the Christmas stuffed tomatoes wash and dry the firm, medium-sized tomatoes.

  • Cut off the top and hollow out the pulp and seeds from the rest of the tomato.

    Inside each tomato cap, add a pinch of salt and turn them upside down, leaving them like that for 15/20 minutes.

  • This step removes some of the water that tomatoes contain, preventing a watery filling especially if prepared a bit in advance, but… if you’re short on time, feel free to skip this method.

  • I also recommend cutting a little off the bottom of the tomatoes to make them more stable and upright!

  • While the tomatoes are resting, put the cheeses in a bowl and season them, mixing everything well.

  • Insert the cloves for the eyes (but you can also use black peppercorns) and a red currant berry for the nose.

  • If you prepare them in advance, close them and decorate just before serving to avoid ruining these cute Santa-filled tomatoes!
