Ingredients

  • 11 oz penne
  • 12.3 oz cherry tomatoes (I love cherry tomatoes but you…)
  • 6.3 oz caciocavallo
  • 2 cloves garlic
  • 1 shallot
  • 3.5 oz bacon
  • as needed extra virgin olive oil
  • as needed chili pepper (optional)
  • as needed lemon zest (optional)
  • as needed salt

Just a few steps for an explosive first course!

  • I start the recipe by chopping garlic and shallot and sautéing them in a pan with a bit of EVO oil.
    I add the bacon cut into strips or cubes, browning it for a few minutes.

  • I add the tomatoes, adjust for salt and pepper, add a pinch of chili pepper if desired, and let it cook for about 20 minutes over low heat with the lid on.

  • I cook the penne al dente and dress them with the sauce with bacon, mixing everything well, and add a bit of grated organic or untreated lemon zest if desired.

  • I chose to plate individual servings and add the caciocavallo at this moment to avoid too many threads in the saucepan, which can sometimes stick a bit, but you can do as you prefer!

    In any case, the dish is tasty, and you can enhance its flavor with a sprinkle of pecorino or parmesan!
