I add the tomatoes, adjust for salt and pepper, add a pinch of chili pepper if desired, and let it cook for about 20 minutes over low heat with the lid on.
I cook the penne al dente and dress them with the sauce with bacon, mixing everything well, and add a bit of grated organic or untreated lemon zest if desired.
I chose to plate individual servings and add the caciocavallo at this moment to avoid too many threads in the saucepan, which can sometimes stick a bit, but you can do as you prefer!
