Prompted by a photo seen in a weekly magazine I tried this different grilled version and here I am to present this very simple citrus and fennel salad. The recipe is the usual one you’ve seen many times with the only but substantial difference that the vegetables are grilled on the griddle and that I added some oil seeds. The photo is not as beautiful as the magazine’s but I’m content — do you like it???

CITRUS AND FENNEL SALAD

Ingredients RECIPE CITRUS AND FENNEL SALAD
- 4 Fennel bulbs
- 4 Oranges
- to taste Black olives
- to taste Extra virgin olive oil
- to taste Oil seeds
- to taste Balsamic glaze
- to taste Lemon juice
- to taste Salt and pepper

Preparation RECIPE CITRUS AND FENNEL SALAD
Heat a griddle.
Clean, wash and cut the fennel into thin wedges.
Brush them lightly with extra virgin olive oil.When the griddle is smoking hot, place the fennel on it and let them cook 3–4 minutes per side.
Supreme the oranges (cut into segments).
Prepare the dressing by mixing in a small bowl the remaining extra virgin olive oil, a few drops of lemon juice, salt and pepper.
Toast the oil seeds in a small skillet and then proceed to assemble the citrus and fennel salad.
Assemble the plate: arrange the oranges, the grilled fennel, the toasted and cooled seeds and drizzle the salad with the lemon vinaigrette, the balsamic glaze, the black olives, adjusting salt and pepper to taste.
Here is an unusual version of oranges and fennel!
